The question of charcoal or gas is a tough one. Purists insist that charcoal gives the food a better flavor, and they may be right. The dripping from the meat mix with the charcoal to produce a more flavorful smoke that marinates the meat as it cooks. There are many outdoor grills that are available in the charcoal variety, so if this is what you prefer then you’re in luck.
